1 3/4 cups (225 grams) all-purpose flour
3/4 cup (150 grams) coconut sugar
1 teaspoon (4 grams) baking powder
100 grams of flax eggs, lightly beaten
113 grams coconut oil, melted at room temperature
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1 cup chopped walnuts
4 tablespoon Ananta Hemp Hearts
3 medium size mashed ripe bananas
2 teaspoon pure vanilla extract
Preheat oven to 350 degrees F (180 degrees C) and place oven rack to middle position.
With coconut oil, grease the bottom and sides of a loaf pan. Line the bottom of the pan with parchment or butter paper.
In a large bowl whisk together the flour, sugar, baking powder, baking soda, salt, and ground cinnamon.
Add the chopped walnuts and all the hemp hearts.
In a medium-sized bowl combine the mashed bananas, flax eggs, melted coconut oil and vanilla.
Now, lightly fold the wet ingredients into the dry ones just until combined and the batter is thick and chunky. Make sure to not over-mix the mixture to smoothen it as we are making bread.
Bake until bread is golden brown and a fork inserted into the center comes out clean, about 60 to 70 minutes.
